This wine is made from a blend of 60% Syrah, 20% Carignan and 20% Grenache Noir. Plotes selections on southern slopes. Manual harvesting with sorting in the vineyards and sorting in the cellar. Total destemming and sulfur-free vinification and use of indigenous yeasts. Extraction with a smooth work. Fermentation in thermo-regulated vats, with maceration for 6 to 8 days maximum. Crumbling and aging to keep the fruit and lightness. Bottling without sticking or filtration. This wine delivers a first caramelized nose, then a bouquet of spices. Tannins chiselled, beautiful minerality and length in the mouth. To decant 30 minutes before serving it on grilled meats, a rooster with wine, or a rabbit with mustard.

Description

The Mas Mellet is located in “Les Costières de Nîmes”, in Gallician. Property of Brice and Emilie for many years, it covers 27 hectares, and dates from the sixteenth century. It was a relay for the pilgrims of Saint Jacques de Compostela. This area is planted with very old vines going back to 1948, more particularly the Carignan.

Organic farming is practiced (disbudding, green harvest, natural fertilizers, lunar calendar) to arrive at average yields of 35H/ha. The harvest is manual to sort out the good grappes.
