For more than 200 years, the Bailly family has been working the vineyard in Pouilly-sur-Loire. Today, the Domaine Bailly is run by Michel and his son David Bailly. They run a 15-hectare vineyard with Sauvignon Blanc grapes and produce mainly Pouilly-Fumé (AOC). The Domaine Michel & David Bailly covers the municipalities of Pouilly-sur-Loire and Tracy-sur-Loire.
“From our vines it’s all the Loire that we can admire and from there Sancerre, Water divides us, and wine unites us” says David Bailly.
A vineyard on the banks of the Loire. With a surface area of 15 hectares, and from a geological point of view, argilocalcaire soils, kimmé-ridgian marls, limestones of Portland, offer a great variety of grounds for a great diversity … The vineyard is worked in reasoned culture, in the respect of the traditions and the environment, by privileging the plowing and scratching of the soil. Traditionally vinified, the wines of the estate are fermented (indigenous yeasts) in thermo-regulated vats, during a fortnight, initially at low temperature and finally towards 20 ° C. They are then reared on lees fermentations for 5 months with two brewing lees and finally stay in vats thermoregulated for 6 months to 1 year.
