François d’Allaines is passionate about the Burgundy region and its wines. At the same time winemaker and merchant, he believes in ripe grapes and long wine maturation to reveal all the finesse and magic of the Burgundy terroirs. Whether the grapes come from his own vineyards (Santenay, Meursault, Chassagne-Montrachet, Pommard), or bought from trustworthy winegrowers, he knows when to step down so that the wines reveal their own personality. He does not produce wines to impress (fat, heavy, sweet, woody, alcoholic …) but always looks for wines of character, pure and elegant, authentic and easy to drink. After attending school in the hospitality business and then at the winegrowing high school in Beaune, François spent 3 years in a wine house in Beaune, specializing in vineyards. He founded his own company in 1990 to buy and sell wines that he personally selected.
The François d’Allaines house has been established in Demigny since 1996, a few kilometers from Meursault, Puligny-Montrachet and Chassagne-Montrachet, very close to this mythical coast where the greatest dry white wines in the world are produced.
A few associates of François, in love with fine wines, have given themselves the means to vinify wines from the best terroirs of Côte de Beaune, Côte Châlonnaise and Mâconnais. Since 1996, the François d’Allaines house has been vinifying grapes and sometimes must from beautiful terroirs. The vinification, aging and bottling are done entirely under the control of François, in the cellars of the estate in Demigny. Its attraction goes to rich wines with a high potential for pleasure, combining fruitiness and freshness on the nose, delicacy and depth on the palate.
Balance and purity, essential to allow the terroir to fully express itself, remain the absolute priority.
